Date & Walnut Cake

A moist tea-cake with dates and walnuts

Ingredients:

  • 1 cup flour
  • 1 cup powder sugar
  • 1/2 cup butter or margarine
  • 2 eggs
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 cup chopped walnuts
  • 1/4 cup warm water
  • 1 tsp vanilla essence


Methods:

1. Stone (de-seed), chop and soak dates in water overnight with baking soda
2. Cream butter and sugar, till light and fluffy
3. Beat the eggs well and gradually add to the butter, sugar mixture. Add vanilla essence
4. Fold in the flour, baking powder and date mixture
5. Pour into a greased tin and bake for 60 minutes at 150°C, in a preheated oven
6. Served best with tea or coffee
