Zucchini Fritters (Greece)
Olokithokeftedes (Zucchini fritters) with Tzatziki
(Yoghurt dip with cucumber and garlic)>

This is a very typical Mezédes (‘little morsels’) dish, used as a popular snack or appetiser


For Zucchini Fritters
  • 2 medium sized Zucchini grated
  • 1 egg
  • ¼ cup bread crumbs
  • 1 tbs parsley finely chopped
  • 1 tbs mint finely chopped
  • Oil for frying
  • Salt and pepper to taste

For Tzatziki
  • 500 gms ‘hung’ yoghurt
  • 1 cucumber grated
  • 1 tsp minced garlic
  • 2 tbs olive oil
  • 2 tbs finely chopped mint leaves
  • Salt and pepper to taste


Zucchini Fritters

1. Mix zucchini with chopped onions, bread crumbs, egg, chopped parsley, mint, salt, pepper. Mix well and form equal sized balls out of the mixture. This will make about 12-15 balls. Flatten slightly to form a patty shape.

2. Heat oil in a pan. Fry, the patties till golden brown on both sides. Served best with Tzatziki


1. Add plenty of salt to grated cucumber. Leave it to drain on a sieve for half an hour. (Tip: draining the cucumber for half an hour enables it to get rid of the moisture or else the tzatziki would turn out too wet or release moisture).

2. Add finely chopped garlic, grated and drained cucumber, olive oil, mint leaves, and salt to the hung yogurt. Mix well.

3. Serve chilled. Garnish with mint leaves.
