Balinese Curry

Coconut based spicy curry from Bali region

Ingredients:

2 cups of coconut milk
2-5 fresh red chilies
2 tbsp garlic minced
2 tbsp ginger minced
1 tbsp curry powder
6-7 baby corn
1 zucchini
5-6 button mushrooms
5-6 leaves of basil
2-3 lime leaves
1 tsp tamarind pulp
2 tbsp oil

Method:

1. Cut the zucchini and mushroom into cubes. Cut the baby corn in long slices. Keep aside.

2. Sauté the red chilies, ginger, garlic and two basil leaves in a pan for two minutes and grind it in a food processor or a pestle mortar.

3. Heat oil in a pot; add the prepared past, in the curry powder, lime leaves and sauté for two minutes.

4. Add the vegetables and stir fry. Add the coconut milk and bring to a boil and simmer for five to six minutes. Add the tamarind pulp and mix well.

Best served with steamed rice
