Eggs Benedict

A typical American breakfast dish. Poached eggs on toasted English muffins served with ham and hollandaise sauce


  • English muffins (if unavailable, use burger buns, cut into half)
  • 1 egg
  • 1 slice of ham

  • For the hollandaise sauce:
  • 2 egg yolks
  • 1 tsp lime juice
  • 1/4 cup melted butter
  • 2 tbsp cream
  • salt & pepper to taste


1. Put the egg yolks, lime juice,salt and pepper, into a food processor. While the machine is running, pour the method butter in a slow and steady stream.

2. Place the content of the sauce into a double-boiler, set over simmering water. Whisk till thick.

3. Toast the bun and butter on both sides. Place the egg and place it on the ham. Spoon the warm sauce (prepared) on the egg.
