Tacos

Fried or rolled corn or wheat tortillas with a variety of filling

Ingredients:

  • 6-8 ready-made, tacos shells (readily available)
  • 2 tbsp Mexican salsa (readily available)
  • 1 cup red-kidney beans or rajma, boiled
  • 1 onion (finely chopped)
  • 1 tomato (finely chopped)
  • 2 tbsp each of green, red and yellow capsicum (finely chopped)
  • 2 jalapeno peppers (Mexican chilli) (if unavailable, use chopped green chillies)
  • 2 tbsp grated cheese
  • 2 tbsp oil
  • salt to taste

Method:

1. Heat oil in a pan. Add onion, tomato, three- coloured capsicums, jalapeno peppers and kidney beans. Stir fry for three to four minutes. Add the salsa. Mix well.

2. Arrange the tacos shells on a serving platter.

3. Spoon the prepared mixture into the tacos shells. Sprinkle grated cheese and serve.
